Consumer Courses

The Seafood Training Centre North Shields is pleased to be able to offer a number of courses designed for everyone with an interest in seafood preparation. We hold these courses in our purpose-built premises within comfortable surroundings at times to suit yourselves.

All course costs are inclusive of all ingredients. Uniforms and utensils are all supplied by ourselves. The courses run dependant on module chosen between 08.30-14.00 Monday to Friday and are on a one to one basis or you can bring along up to 2 other people. Each price is per person.


Current courses include:

  • Seafood preparation course - taught individually or in groups of 3-4 in a specially designed galley with everything provided for the course. All you need to bring is yourself! We cover a vast range of seafood, including crab, lobster and salmon. See below for further details.

  • Unusual species course - including shark, red snapper and John Dory. We can teach filleting and preparation either in combination or separately.

  • One Two or Three day filleting course - learn how to prepare freshly caught fish and make it ready to cook. Course times are 8.30 a.m. to 3.30 p.m. Total price £90 per day.

  • 3 hour filleting course - aimed at all anglers and fishermen, particularly those fishing for a hobby. It covers gutting and filleting and is available to anyone over the age of 16. Total price £45

  • School Visits - give your pupils a fascinating insight into the world of seafood and the processes involved in bringing it to your table. Call us to arrange a visit from our team. We'd be delighted to get you and your pupils involved in the world of fish!




Seafood Preparation Course

This consists of 13 different modules. For each module you prepare from scratch the fish or shellfish that you have chosen to prepare. So for example you might spend the morning learning how to fillet or steak, skin and gut your fish and in the afternoon you would cook your chosen item, using recipes created by our resident cook Carole-ann & consultant chef Adam.

If for example you had chosen lobster you would prepare it from fresh to eating. We call this from the "boat to the throat". We have two recipes to choose from for every unit, and discounts are available if you take a full module and/or there are three in your group.

Choose one or more of the units below. All modules and units are interchangeable - for example, you could do courses in lobster, haddock and sea bass or just salmon.

Unit 1 (10 modules)
